Wash and pat dry green chillies. Remove stems, slit, and cut into 2 pieces.

Add vinegar and salt to chillies. Set aside for 15 min.

Toast fennel, fenugreek, and cumin seeds in a pan on low heat.

Let seeds cool, then coarsely grind them.

Strain vinegar and salt water from chillies, keep the liquid aside.

Add ground spices, red chilli powder, turmeric, mustard seeds, and nigella seeds to chillies.

Pour back the reserved vinegar-salt water. Mix well.

Transfer to an airtight container.

Tips
