Ingredients

Prep: 30 minutes | Cook: 20–25 minutes
4-5 people
  1. 1 cupfine bulgur wheat
  2. 500 glean ground beef or lamb
  3. 1small onion, finely chopped
  4. 1/4 cuppine nuts (optional)
  5. 1 tspallspice
  6. 1/2 tspcinnamon
  7. Salt and pepper to taste
  8. 2–3 tbsp olive oil or ghee
  9. Oil for frying (if frying)

Steps

Prep: 30 minutes | Cook: 20–25 minutes

    Soak bulgur in cold water for 10 minutes; drain and squeeze out excess water.

  2. 2

    Mix soaked bulgur with half of the ground meat, salt, and pepper until dough-like.

  3. 3

    In a pan, sauté remaining meat with onion, pine nuts, allspice, cinnamon, salt, and pepper until cooked; let cool.

  4. 4

    Shape bulgur-meat mixture into small oval shells, hollow out the center, and fill with meat mixture. Seal carefully.

  5. 5

    Fry in hot oil until golden brown or bake at 180°C (350°F) for 20 minutes until cooked

Tips

Handle the bulgur dough gently and seal the filling tightly to prevent the kibbeh from breaking during frying or baking.
