Ingredients

Prep:25 minutes | Cook:15 minutes (for some items)
4-5 people
  • 1 cupcooked chickpeas (for hummus)
  • 2 tbsptahini
  • 1lemon, juiced
  • 1garlic clove, minced
  • 1medium eggplant (for baba ghanoush)
  • 1 cupchopped parsley
  • 1 cupchopped tomatoes
  • 1/2 cupchopped cucumber
  • 1 tbspolive oil
  • 8–10 grape leaves (stuffed or ready-made)
  • Salt and pepper to taste
  • Optional: olives, pickles, pita bread for serving

Steps

Prep:25 minutes | Cook:15 minutes (for some items)
  1. 1

    Hummus: Blend chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper until smooth.

  2. 2

    Baba Ghanoush: Roast or grill eggplant until soft; peel and mash, then mix with garlic, lemon juice, tahini, and olive oil.

  3. 3

    Tabbouleh: Mix parsley, tomatoes, cucumber, olive oil, lemon juice, and a pinch of salt.

  4. 4

    Arrange hummus, baba ghanoush, tabbouleh, stuffed grape leaves, and optional sides on a large platter. Serve with pita bread.

Tips

Prepare dips and salads in advance and chill; assemble just before serving to keep flavors fresh and vibrant.
