Here is a simple recipe for lacto-fermented red onions using a basic salt water brine. This method results in a tangy, probiotic-rich condiment that is easier to digest than raw onions and lasts for months in the fridge.

First upon peel onions and wash them under water. Then using a knife make a deep cut on each onion. The cut should be in a plus sign. This will ensure that the onion will soak up the flavor.

Take a saucepan. Add ½ cup of water, 4 cloves, 10 black pepper, 2 tbsp sugar, 1 tbsp salt and beetroot chunks. Mix it well. Now put it on medium flame over the gas. Stir so that the sugar melts. Let it boil. After a boil, turn off the flame and let it cool for a minute.

Now in a glass jar add onion, slit ginger and slit green chilli.

Then after add beetroot water, vinegar and mix it very well. Let the onions soak in vinegar. After mixing, you can see the nice color of the vinegar pickled onion. Refrigerate it for 24 hours to let the onions fermented.

Now our very yummy and delicious pickled vinegar onion is ready to serve. Serve it with your favorite meals.
