Plum cake can be enjoyed all year through but Christmas time is always special. I’m sharing the technique to keep the cake soft and moist for atleast 10 days. Let’s bake!

Plum cake can be enjoyed all year through but Christmas time is always special. I’m sharing the technique to keep the cake soft and moist for atleast 10 days. Let’s bake!
Steps

Cut the prunes, chop the chocolates, roast the walnuts. Set aside the walnuts

In a pan heat the wine and set aside. Add chocolates and prunes and mix well, set aside

In a bowl add seedless raisins to hot water and sugar, set aside for 20 mins
- 4
Wet ingredients- in a bowl break the eggs and whisk well for 3 mins, add sugar slowly and whisk 4-5 mins. Add melted butter and mix well.

Add cocoa powder to oil and mix, add that to egg sugar mix and use cut and fold method.

Add chocolate and prunes & roasted walnuts, mix and use cut & fold method well

Dry ingredients- add sifted flour and use cut & fold method to mix well, tap to discard the air bubbles

Add the batter to a greased baking tin on parchment paper. Pre heat oven to 180 deg C and bake for 50 mins or until done by checking through toothpick method

Once baked cool completely and cut slices to serve
Tips
Keep the cake in the oven after baking for 10 mins, cool completely and keep in the parchment paper with a cloth covered all sides
The cake should be kept in cool and dark place and allowed to breathe.
Will stay for 10 days in room temperature
