Punjabi Pinni

Pinni is a special winter treat. I made this pinni with chickpea flour (besan) and whole wheat flour. Pinni is a traditional sweet from Punjab and North India, usually enjoyed during the winter. It is served as a dessert and made with clarified butter (ghee), whole wheat flour, chickpea flour, sugar, and dried fruits.

Steps

Heat ghee in a large pan and fry the edible gum (gond) until it puffs up. Let it cool, then crush it into small pieces.

Chop the almonds, cashews, and raisins.

Heat ghee in the pan and add the chickpea flour. Roast until it turns golden and aromatic.

In the same pan, heat more ghee and add the whole wheat flour. Roast until golden brown.

Roast both flours together on low heat, mixing well, until they are evenly browned and fragrant.

Heat a little ghee and fry the chopped dried fruits.

Mix the fried dried fruits and crushed edible gum into the roasted flour mixture.

Let the mixture cool, then add the sugar and mix well.

Sprinkle milk over the mixture and shape into round balls (laddus).
