Ingredients

30 minutes
1 large Loaf
  1. 3cups, divided Bread flour
  2. 1.5 tspSalt
  3. 2 1/4 TSPActive dry yeast
  4. 1 tspSugar
  5. 2 tbspOlive oil (light or mild)
  6. 2 tbspHoney
  7. 0.375 cup (6 tbsp)Warm water
  8. 0.5large Egg
  9. 0.5yolk Egg yolk
  10. 0.5egg white Reserved egg white
  11. pinchSalt

Steps

  1. 1

    Mix 0.75 cup flour, salt, yeast, and sugar in a large bowl.

  2. 2

    In another bowl, whisk warm water, honey, olive oil, 0.5 egg, and 0.5 yolk until smooth.

  3. 3

    Add wet to dry ingredients. Mix, then add remaining flour gradually until soft and slightly tacky.

  4. 4

    Knead 6–8 minutes until smooth and elastic.

  5. 5

    Place in oiled bowl, cover, and refrigerate 18–36 hours.

  6. 6

    Rest dough at room temp 45–60 min. Shape into loaf or braid. Place on parchment-lined sheet.

  7. 7

    Cover loosely and let rise 45–75 min until puffy.

  8. 8

    Brush with reserved egg white and pinch of salt.

  9. 9

    Bake at 350°F (175°C) for 25–30 min until golden and hollow-sounding underneath.
