Mix 0.75 cup flour, salt, yeast, and sugar in a large bowl.

In another bowl, whisk warm water, honey, olive oil, 0.5 egg, and 0.5 yolk until smooth.

Add wet to dry ingredients. Mix, then add remaining flour gradually until soft and slightly tacky.

Knead 6–8 minutes until smooth and elastic.

Place in oiled bowl, cover, and refrigerate 18–36 hours.

Rest dough at room temp 45–60 min. Shape into loaf or braid. Place on parchment-lined sheet.

Cover loosely and let rise 45–75 min until puffy.

Brush with reserved egg white and pinch of salt.

Bake at 350°F (175°C) for 25–30 min until golden and hollow-sounding underneath.
