Warm Jalapeño Popper Dip

This is a long-ago brainstorm as per my usual, when a recipe for something will just pop into my head, so I have to try it. LOL Enjoy! I just made my first batch with the addition of ranch packets...11 out of 10, highly recommend!
P.S. ABSOLUTELY PERFECT snack to add to your Superbowl Party menu!!!

This is a long-ago brainstorm as per my usual, when a recipe for something will just pop into my head, so I have to try it. LOL Enjoy! I just made my first batch with the addition of ranch packets...11 out of 10, highly recommend!

Steps
- 1
OPTIONAL STEP: In a preheated 425° oven or broiler, roast your peppers for around 20-30 minutes, flipping half way through. Once roasted and cooled enough to handle, dice them up. Turn the oven down to 325° and set to bake, for heating the dip once it's mixed.
- 2
In a large mixing bowl with a hand mixer, or in a stand mixer, beat cream cheese until smooth and creamy.
- 3
Add in your diced jalapeños and blend well.
- 4
Add in your dry ranch mix, one package at a time to avoid as much powder kick-up as possible.
- 5
Add in your shredded cheese a little at a time, while scraping the sides and bottom of your mixing bowl with a rubber spatula to make sure everything is getting well combined.
- 6
Lastly, add in half of your cooked and crumbled bacon, mixing it in very well.
- 7
Pour the mixture into a 9"x 9" casserole dish. Spread out the top evenly, leaving room for the remaining bacon. Bake at 325° for about 30 minutes, just enough to heat the dip through and re-crisp the bacon on top.
- 8
Remove from the oven and garnish with the diced green onions (if desired) then serve while it's hot! Enjoy!
- 9
Any dip mixture that won't fit into the casserole dish can be nibbled on while you wait for the casserole dish to heat, or for those that would prefer the dip cold, it can be chilling in the fridge while the big dish is in the oven. (In my house, we nibble on it while we wait lol)
- 10
SIDE NOTE**: This can easily be mixed the night before, and it will taste even better if you do! BUT if you do make ahead, DON'T forget to put it into the oven as you start the preheat process, so the dish can heat up at the same time as the oven to avoid shattering your glass casserole dish!!!
