  1. 400 mlcoconut milk
  2. 200 gcarrots, diced
  3. 150 gpotatoes, diced
  4. 100 gcelery, chopped
  5. 50 gonion, finely chopped
  6. 15 gfresh ginger, grated
  7. 5 ggarlic, minced
  8. 5 gcurry powder
  9. 2 gfresh thyme leaves
  10. 500 mlvegetable broth

    In a large pot, sauté chopped onion in a drizzle of oil until translucent, about 5 minutes.

    Add minced garlic, grated ginger, and curry powder. Cook for 1 minute until fragrant.

    Stir in diced carrots, potatoes, and chopped celery. Sauté for 5 minutes.

  4. 4

    Pour in vegetable broth and bring to a simmer. Cook for 15-20 minutes, or until vegetables are tender.

    Add coconut milk and fresh thyme leaves. Bring back to a gentle simmer.

  6. 6

    Season with salt and pepper to taste. Do not boil after adding coconut milk.

  7. 7

    Serve hot, garnished with a sprinkle of fresh herbs if desired.

Tips

For an extra creamy texture, blend a portion of the soup before adding the coconut milk.

Adjust the amount of curry powder to your preference for a milder or spicier kick.

Ensure vegetables are cut into uniform pieces for even cooking.
