I found a similar recipe online and adapted it to suit my taste and diet preferences. Honestly I couldn't be more impressed, they are fantastic!!

I found a similar recipe online and adapted it to suit my taste and diet preferences. Honestly I couldn't be more impressed, they are fantastic!!
Steps

In a Nutri Bullet or Smoothie maker, bitz together: Black beans, Eggs, Dates, Oil

Transfer to bowl. Add Maple Syrup, Vanilla Essence, Coffee and Mix

Serve in the Cocoa & Baking Powder. Stir in Salt and Monkfruit Sweetener.

Transfer to Muffin Tray. Make 7 x Large Muffins

Cook at Gas Mark 4 on lower rack (or electric alternative), and turn the tray half way through to ensure even cooking

Optional Topping/Frosting. Mix together Cocoa powder, Maple Syrup, cream and yoghurt. Or traditional cream and dark chocolate panache.
Tips
I prefer a neutral oil like Mild Olive Oil or Butter. Oil makes a 'moist' texture, butter is slightly drier.
You can add chocolate chips if you wish.
If you want an even lower carb alternative, leave out the Dates and substitute the Maple Syrup for extra Monkfruit Sweetener.
I WAS SKEPTICAL BUT YOU HONESTLY CANNOT TASTE THE BLACK BEANS!!
