The Spanish greens dish is very healthy and it is especially good for children. And the Curry is really delicious😋.
Steps

Pluck and wash spinach leaves thoroughly.

Chop onion and tomato. Make ginger-garlic paste.

Heat oil in a pan, add cumin seeds and let them crackle.

Add chopped onion, sauté until light brown.

Add boiled potato, sauté for a few minutes.

Add salt and turmeric, stir well.

Add spinach, stir and cover. Cook for 4-5 minutes.

Add tomato and ginger-garlic paste, stir well.

Once it boils, add a slurry of flour and water.

Add coriander powder, more salt if needed, and water. Boil and cook well.

Serve hot with rice or roti.
Tips
Sauté the onions until they are light brown before adding the potatoes, and after sautéing the potatoes for a few minutes, add the spinach.
