Zucchini and Sweet Potato Gnocchi with Meat Sauce

I hadn't made gnocchi in a while and had half a zucchini squash and half a sweet potato, so I decided to make gnocchi. They turned out super tasty.

First, take the cooked zucchini squash and sweet potato and set them aside.

Chop the onions, green bell pepper, and beef. Sauté them with a little oil.

Continue sautéing gradually.

Next, add the tomato sauce along with a little water and the seasonings. Mix well.

Once the sauce is ready, set it aside.

Mash the zucchini and sweet potato with a potato masher to make a purée.

Add salt and oil, and mix again.

Add the flour and mix with a spatula.

Remove the dough from the bowl and knead it a little.

After kneading for a while, the dough should be smooth.

Cut the dough into medium-sized pieces and roll them into ropes. Cut them into gnocchi pieces.

Roll each gnocchi over a fork to shape them, set aside, and bring a large pot of water with a pinch of salt to a boil.

When the water boils, carefully add the gnocchi.

When the gnocchi float to the surface, remove them with a slotted spoon.

Pour a little meat sauce in the serving dish before adding the gnocchi, then add all the gnocchi.

Finally, pour the rest of the sauce on top.

Serve on plates and sprinkle with grated cheese if desired.
