Boil beets with skins on until you can insert a fork easily.

Put on latex gloves and rub the beets. When you do this, the skin falls right off.

Slice and put in jars.

Cover with liquid mixture leaving air space at the top.

Bring to boil and simmer.

Then cover in water and boil five minutes to seal lids.
