Mango Granita

A few weeks ago, my daughter gave me some Mangos. Today I found one Mango still sitting in the fruit bowl, and it was absolutely ripened with its skin covered with freckles. I decided to make it into this Granita. Nothing is easier to make than this icy dessert, and it was lovely to enjoy on a hot day like today.

Steps
- 1
Remove skin and seed from Mango, and place the flesh in a jug OR bowl, add Water, Caster Sugar and Lemon Juice, and use a stick blender to blend until smooth. This process can be done using a different type of blender.
- 2
Taste it, and add extra Sugar and Lemon Juice as required, and blend again.
- 3
Pour the mixture into a container and leave in the freezer until icy.
- 4
Use a fork to break up into crystals and enjoy.
