Cake Mix: Dice the butter and put it in a bowl. Then pour the sugar into the bowl and beat with the butter until combined. Sieve the flour and baking powder into the mixture and pour the vanilla extract into it. Mix the eggs in a bowl with a fork then add it to the mixture, mix until thoroughly combined and until it has air in it!

Get four small cake tins or three larger cake tins and line them with baking paper. Pour the mixture into the prepared tins making sure they each have the same amount of batter and is spread evenly.

Bake the tins in the oven for at least 25mins maybe longer at 180° C. To determine if it’s cooked stick a skewer in it and if it comes out clean then it’s cooked if it doesn’t you may need to cook it a little longer. Make sure it’s cooled before you add the icing or the icing will melt.

Buttercream icing: Using a food processor or electric mixer, beat the butter, milk, vanilla extract and half the sugar in a bowl until smooth. This will probably take a few minutes. Gradually add the rest of the icing sugar to produce a buttercream with a smooth creamy texture.

Pink Icing: Pour the icing sugar into a bowl and a tsp of water. Whisk it together then add some of the food colouring to the mixture then gradually add the rest of the water until it is a smooth texture. If it is not quite perfect pink then you can add some more of the colouring until it’s perfect pink.

Putting it all together: Cut a hole in either one of the three cooled cake blocks or two of the four cake blocks. Make sure you choose the larger ones for this part. Stack the smallest on the bottom then the ones with holes in on top. Putting buttercream in between each layer.

This is where the surprise comes in. When you cut into it the skittles should pour out. Pour skittles in the hole until it’s full. Add buttercream to make the layer stick then add the last layer so the skittles become hidden.

Put a thin layer of Buttercream over the entire cake. This is called the crumb coat.

Pour some of the pink icing on the top of the cake and let it drip down the side. Using the remainder of the pink icing, spread it around the side of the cake so everything is covered in icing

Then, to finish it off, sprinkle some sprinkles over the top so it becomes a party cake

Sit down and enjoy.
Tips
Make sure it has enough air and has been cooked thoroughly otherwise it might condense. Serve as the centrepiece
