Wash sabudana and soak in water for 1 hour. Drain well.

Heat mustard oil in a pan. Add green chilli, thinly chopped potato, and peanuts. Roast for 1 minute.

Add hot chilli powder and salt. Mix well.

Add soaked sabudana. Stir gently for a few seconds until mixed.

Turn off the heat. Add lemon juice if required

Transfer to a serving plate and enjoy your sabudana khichdi!
Tips
Using thinly chopped potatoes helps them cook quickly and evenly. Adding lemon juice gives a nice tangy flavor.
