Ambur chicken biryani

The colour for this Ambur biryani comes from the red chillies. I used a mix of regular chillies and Kashmiri chillies... Start by soaking dry red chillies in hot water for 15 minutes. I used kashmiri red chillies and regular red chillies.

Take them in a blender and add very little water to make a smooth paste.

Wash rice really well in multiple changes of water. Soak them in water for 30 minutes. Set aside. I have added three cups of water to two cups of rice. I have added a little coriander and mint to the electric cooker and left three cups of water for the rice to soak. I have prepared this recipe in an electric cooker.

Add ghee, oil in the pan, add cinnamon sticks, cloves, cardamom, bay leaves, fry them, add onion and saute well.

Once the onion is well browned, add the garlic paste and saute well for one minute.

Add the ginger paste and fry well for one minute.

Add tomatoes and sauté. Add coriander, mint, green chilies and sauté well. Add two spoons of the ground chili paste saute well...

Once everything is well cooked, add yogurt and saute for a minute, then add chicken and salt and saute well.

Add a little water to the chicken and cook for 10 minutes until dry.

Add the chicken masala we have prepared to the soaked rice in the electric cooker. Squeeze the lemon juice, close the cooker and turn it on. The biryani will be ready in half an hour. Finally, add a tablespoon of ghee and cover it and keep it for ten minutes.
