Ok Yes I know - people dont like weird parts of any animal but really its just an amazing bone - full of flavour and of course the most amazing meat. This dish is very modern Thai recipe - Super afordable and packed with protien and crazy Thai Flavours. Try it once and believe me it will become a treat :P Enjoy

Ingredients

2 People
  1. For the Bones:
  2. 1 PackPork Spine Bones (you can use rib if want) about 750gr
  3. 750 Mlwater
  4. 1Pork Stock Cube
  5. 1/4Large onion, finely Chopped
  6. 6 Clovesgarlic, peeled and smashed
  7. 1/4 Tspwhite peppercorns, cracked
  8. 1 TbspLight Soy sauce
  9. 1 TbspFish Sauce
  10. For the Spicy Soup:
  11. Saved Stock from Above
  12. 1& 1/2 Tbsp Lime Juice
  13. 2 TspFish Sauce (to Taste)
  14. 1 TspCastor Sugar (to Taste)
  15. 5-6 ClovesGarlic Finely Chopped
  16. 4-12Thai Bird Chilies - Really this is spicy but up to you :P CAREFUL
  17. 1 BunchCoriander Finely chopped
  18. 1Small Bunch Spring Onions Finely Chopped

  1. 1

    In your Presure Cooker - add bones,Stock Cube, Water, Fish sauce and soy Sauce and cook on High for 10 mins. Allow to release for 10 mins then carefull open the Lid and skim off and Scum that floats to the top (discard this)

    Add the onions, garlic, and peppercorns and cook on High for 45 mins. Allow to presure relase for 10 mins then carefully remove the lid. Transfer bones to a large serving bowl.

    Strain the Soup and discard the onion and garlic - they will get bitter if keep cooking. Put soup into a pan or back into presure cook and heat on Saute. Add the everything to the pot and heat adjusting the seasoning. Pour the soup over the bones and sprinkle with a little extra coriander and Serve. OF COURSE with Thai jamine Rice to soak up all those juices. The meat should fall off the bone. ENJOY :P

I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
