This quick, refreshing, cold noodle dish is a summertime favourite in Japan. It is called zaru-soba because soba was traditionally steamed on bamboo trays called 笊 (zaru).

This quick, refreshing, cold noodle dish is a summertime favourite in Japan. It is called zaru-soba because soba was traditionally steamed on bamboo trays called 笊 (zaru).
Steps

Combine the dipping sauce ingredients in a pot and bring it to a boil. Turn off the heat, let it cool down and refrigerate.

In a separate pot, boil the soba noodles and rinse under ice cold water.

Garnish the dipping sauce with sesame seeds and spring onion.
- 4
Garnish the soba noodles with seaweed and serve ice cold. Enjoy!
Tips
I could only find dried soba noodles, but of course fresh ones are best!
If you are in a rush, you can cool the noodles and dipping sauce with an ice bath.
