Ingredients

  • 260 gfresh/dried soba noodles
  • As needednori (Japanese seaweed)
  • As neededsesame seeds
  • As neededspring onion, thinly sliced
  • Noodle dipping sauce (めんつゆ)
  • 2 tbspsoy sauce
  • 2 tbspmirin
  • 2 tbspsake
  • 3 gdashi powder

Steps

    Combine the dipping sauce ingredients in a pot and bring it to a boil. Turn off the heat, let it cool down and refrigerate.

    In a separate pot, boil the soba noodles and rinse under ice cold water.

    Garnish the dipping sauce with sesame seeds and spring onion.

    Garnish the soba noodles with seaweed and serve ice cold. Enjoy!

Tips

I could only find dried soba noodles, but of course fresh ones are best!

If you are in a rush, you can cool the noodles and dipping sauce with an ice bath.
