Today I made a traditional recipe and they turned out amazing: crispy on the outside, tender on the inside, and with that classic salt cod flavor that brings back memories of old family recipes.

First, remove the skin from the cod and flake it into small pieces.

Next, add the egg, flour, water, food coloring, salt, and the minced garlic and parsley mixture.

Mix everything well until combined.

Heat about 1 inch of olive oil in a skillet for frying the fritters. When the oil is hot, use two spoons to scoop the batter and drop it into the oil, shaping it into small balls.

Turn them so they brown evenly on both sides, then transfer to a plate lined with paper towels to drain excess oil.
