Peel and remove the 'eyes' on the fruit. Halve and remove the core. Clean and cut into cubes. Grate or use blender or food processor to turn the pineapple into fine paste. See pic below for reference. Pour pineapple into a deep skillet. Add 1 cinnamon stick, sugar & lemon juice. Cook over medium heat until it boils.

Keep stirring until it starts to thicken. Continue to cook until it turns into thick paste but spreadable. Give it a taste. Add extra sugar if needed. Check the consistency, lower down the heat and continue stirring until the liquid is almost gone.

Turn off the heat. Leave it to cool completely. Store in a clean jar.
Tips
1. For pineapple 🍍 filling used in cookies or tarts, cook jam until it thickens completely with no visible liquid. Leave it cool completely as it will harden as it cools. Then, refrigerate. Take out from the fridge before using in cookies. Cooled filling is easy to shape and use as filling when making cookies.
