Ingredients

60minutes
6-8 servings
  • 6-8chicken quarters, skinless
  • 10 clovesgarlic
  • 5green chilies
  • 1 inchginger
  • 1 tbsp.cumin seeds
  • 1 tbsp.olive oil
  • 1 cupcilantro
  • 1 cupmint
  • 1 cupyogurt
  • 2 tbsp.lemon juice
  • To tastesalt
  • 1 tsp.pepper powder
  • 1 cupcream

Steps

60minutes
  1. 1

    Heat oil in a skillet over medium high heat and sauté the garlic, ginger, cumin and green chilies till aromatic.

    Add cilantro and mint and sauté for 1 minute.

  3. 3

    Remove and cool and then blend into a smooth paste.

  4. 4

    Score the chicken pieces and season with salt and pepper.

  5. 5

    Add lemon juice, yogurt and green paste. Mix well to coat the chicken. Cover and refrigerate for 40 minutes, overnight works best.

  6. 6

    Remove chicken from fridge and bring to room temperature.

  7. 7

    Pan sear the chicken while basting with some oil and lemon juice. Cook till tender. Remove and set aside.

  8. 8

    In the gravy add the cream and cook till thickens.

  9. 9

    Place gravy in a plate and top with chicken.

  10. 10

    Serve with caramelized onions and lemon wedges.
