Ingredients

2 servings
  • 450 gBeef sirloin (cubed, 1–1.5”)
  • 180 mlPlain Greek yogurt
  • from 1 lemon (about 2 tbsp)Lemon juice
  • 15 mlOlive oil
  • 3 clovesGarlic (minced)
  • 5 gSalt
  • 5 gPaprika
  • 2 gCumin
  • 2 gBlack pepper
  • 2 gTurmeric (optional)
  • 2 gCoriander (optional)
  • 1 pinchCinnamon (optional)
  • 15 mlWhite vinegar or pomegranate molasses (optional)

Steps

    Mix all marinade ingredients in a bowl.

    Add beef cubes and coat thoroughly.

  3. 3

    Cover and refrigerate for at least 4 hours, preferably overnight.

    Preheat grill to medium-high. Oil the grates.

  5. 5

    Skewer beef, leaving space between pieces. Shake off excess marinade.

  6. 6

    Grill over direct heat, turning every 2–3 minutes, for 8–12 minutes total.

    Aim for charred edges and a juicy, slightly pink center.

  8. 8

    For smoke flavor, use a charcoal grill or add a wood chunk. On gas, let drippings create flare-ups.

    Serve with warm pita, rice or flatbread, and grilled onions and tomatoes.

  10. 10

    For quick garlic sauce: mix 120ml mayo, 1 minced garlic clove, a squeeze of lemon, and a pinch of salt.

Tips

Don't overcook the kebabs; slightly pink inside is perfect. The yogurt marinade keeps them tender and juicy, while char adds flavor.
