Bindi is favourite vegetable in my home. So I always try different ways to make it.

Wash and clean bhindi. Cut it into half. Slit it. Deep fry it and keep it aside.

Take curd and add all masalas shown in the picture. Mix it well. In the pan, add oil. Once oil is hot, add carom seeds, Asafoetida and grounded green chillies, ginger and garlic. Add chopped onion and saute.

Add tomato and continue to cook on low flame. Add mixed curd masala and continue to cook on low flame.

Add fried bhindi. Adjust the salt if you want. Continue to cook on low flame without covering the lid.

Serve hot with roti.
Tips
Use tender bhindi.
