I love morocco and have been many times. This mega simple and mega quick version of their Lemon chicken is so fast and MEGA cheap. You know me..... I love delicious food that costs little to make for all the family. Its a little like my Spaghetti Sauce - just add what you have in the fridge or cupboard and as many veg as you like or need to use up. ENJOY :P

Get everything ready !!! - this recipe goes quickly ! Mix marinade and coat the chicken put on one side (or fridge upto 1 night)

Set your pressure cooker the saute - add butter and oil then add onion and fry until edges start to brown. Add garlic and then make space in middle and put chicken skin side down until browned. Using tongs turn chicken over cooked for 2 mins.

Add all the other ingredients and then cook on high pressure for 10 mins. Allow to pressure release.

Make the Cous cous - mine takes about 2 mins (I add a little butter and olive oil optional)

Cut chicken then serve in large bowl. I put Cous cous on bottom then chicken then spoon over the sauce. Sprinkle with coriander. Amazing - enjoy :P
