Ingredients

6 chillas
  1. 1/2 cupRolled oats
  2. 2-3 tablespoonsChana flour (besan)
  3. 1/3 cupOnion, finely chopped
  4. 4Green chillies, finely chopped
  5. 1/3 cupCoriander leaves, chopped
  6. 1 cupMixed vegetables (grated carrot, bottle gourd, cucumber, beans, capsicum, etc.)
  7. 2 tablespoonsCurd (optional)
  8. 1/2 teaspoonSalt
  9. 1/2 cupWater
  10. as neededRed chilli powder (optional)
  11. 1/4 teaspoonTurmeric powder
  12. 1/4 teaspoonGaram masala
  13. 1 tablespoonSesame seeds
  14. as neededfor cooking Oil
  15. as desired Fresh curd (for serving)

Steps

  1. 1

    Combine 1/2 cup oats, 2 to 3 tablespoons chana flour, 1/3 cup onion, 4 green chillies, 1/3 cup coriander, 1 cup mixed veggies, 2 tablespoons curd, 1/2 teaspoon salt, and 1/2 cup water in a bowl.

    Mix well and let the batter rest for 10 minutes. Add red chilli powder (if using), 1/4 teaspoon turmeric, 1/4 teaspoon garam masala, and 1 tablespoon sesame seeds. Mix again. Check the video attached for consistency of the batter.

    Heat a non-stick pan and brush with a little oil. Pour a ladleful of batter, spread gently into a circle.

    Cook on medium heat until golden on one side, then flip and cook the other side.

    Repeat for remaining batter, adding oil as needed.

    Serve hot with fresh curd or enjoy as is.

Tips

For extra crispiness, ensure the pan is well-heated before pouring the batter and use a little more oil while cooking.
