Salade Niçoise - Nice salad

Niçoise describes a garnish or style of preparation and indicates that the dish is served or prepared with tomatoes, black olives, capers and anchovies. The word stems from the feminine of niçois meaning ‘of Nice’ with use from the 19th century.

Salade Niçoise is a traditional recipe heavily focused on local, fresh ingredients and it is stated that nothing is cooked except the egg and consists of anchovies (and for posh people tuna), olives, hard boiled eggs and seasonal vegetables from the garden such as tomatoes and a dressing of olive oil. However, there is a great debarcle and a fierce culinary divide of traditional, raw vegetables verses the modern addition of cooked ingredients.

Depending on where one goes in France, boiled potatoes and green beans are often added along with wine vinegar to the olive oil to make a vinaigrette. Some locals say this is a sin and refer to this as a ‘salade a la poubelle’ (dustbin salad) but the famous Georges Auguste Escoffier, the grandfather of French cuisine, added these in his famous cooking bible, Le Guide Culinaire published in 1903. In answer to this, the Niçois (people from Nice) state that he was born across the river in Villeneuve-Loubet, Provence but he completed his early culinary apprenticeships in Nice which was part of the Italian House of Savoy when he was born and was only annexed to France in 1860!

This is the version I like with both anchovies and fresh tuna, potatoes and green beans.

Ingredients

4 people
  • 300 gJersey Royals or good quality small potatoes
  • 2eggs
  • 150 gFrench beans
  • 2large ripe beef tomatoes
  • 1/4-1/2cucumber
  • 1/2red onion or 4 spring onions
  • 50 gsmall black pitted olives
  • 6 – 8anchovies in olive oil
  • 100 gtuna
  • a fewbasil leaves, torn
  • 1 tbspcapers (optional)
  • Dressing:
  • 1small clove garlic, finely minced
  • pinchcoarse sea salt
  • 2anchovies
  • 2 tbspextra virgin olive oil
  • 1 tbspoil from the anchovies
  • 1 tbspred wine vinegar
  • black pepper

Steps

    Dressing: finely mince the garlic and add to a pestle and mortar. Grind with a good pinch of sea salt. Add the anchovies and bash. Add the oil and vinegar and mix to combine. Season with black pepper. Set aside.

    Scrape the potatoes and boil until fork tender. Tail the beans and boil in salted water for 3 minutes then plunge into ice cold water. Cook the eggs until hard boiled. Cut the tomatoes and eggs into quarters or slices. Peel, deseed and slice the cucumber. Peel and finely slice the onion or if using spring onions pull apart. Chop the anchovies and capers.

    Pat the tuna dry, season and sear on each side in a very hot pan, 2 minutes rare, 3 minutes medium and 4 minutes well done (this is not recommended as the fish will become dry). Rest for a couple of minutes before slicing.

    Assemble the salad and combine with the dressing and basil leaves.

    Serve immediately with a chilled, dry Provencal rose.
