Steps

Clean the chicken,pat dry,lightly salt one can shallow fry max 4 min per side till golden

Heat 3 tbsp of oil add whole spices bay leaf, cinnamon and cardamom, sizzle for 30 secs and add 2 chopped onions fry for 10 min until soft and until starting to golden brown

Add garlic + ginger fry 1 min,add curry powder + turmeric + paprika and cumin powder stir 30 sec.

Add blended tomatoes cook for 8 min till thick and oil shows

Add chicken pieces + potatoes if using, simmer for 5 min, add half cup of thin coconut milk and 1 cup of water,add salt and cover simmer,15 min

Add 1 cup of peas + green chili, simmer 5 min.

Add 1 half cups of thick coconut milk,add garam masala, simmer 7 mins in very low heat don't boil hard or coconut splits, source should be yellow and creamy and add Dhania

Steamed rice, wash rice till water clear, drain,boil 3half cups of water add salt and 1 tbsp of oil add rice and stir once,boil 2 min uncovered then cover tight lower heat 12 - 15 min no peeking fluff with fork garnishing with boiled peas and diced carrots.
Tips
Add any seasoning of your choice to make it more to your liking
