This dish can actually impress your family and the guests. Best for winters. Creamy, cheesy, lip smacking and delicious!
Fondue is a Swiss dish where you dip food into a communal pot of melted warm sauce using long forks. Fondue can be of many different types - cheese sauce with saute veggies like broccoli, carrot, cauliflower, potato chips; chocolate sauce with marshmallow, brownies, pretzels, pieces of cake or fruits such as strawberries, apple, bananas and pineapple.
Fondue is a versatile concept. It can be Indian, Italian, Chinese, continental ; sweet or savoury!

Steps
- 1
Blend the leftover bhaji until smooth. Pour into a pan and bring to a boil.
- 2
Add cheese slices and cream. Stir until cheese melts. Adjust spices if needed. Do not overcook.
- 3
Cut buns into square chunks. Melt butter in a pan, sauté bun pieces until golden and coated.
- 4
Transfer hot bhaji fondue to a fondue bowl. Serve immediately with buttered buns and onion pieces. Ensure to cut onions in the chunks big enough to pick with a fork.
- 5
Pick a piece of bun and a piece of onion in a fork, dip and swirl it in the hot fondue and indulge!
- 6
There are different ways of making this. I made it from left over bhaji. 1. It can be made with just the onion-garlic-tomato-capsicum gravy spiced up with paubhaji spices and made creamy with milk, cream and cheese. 2. It can also be made creamy and cheesy by adding the cheese sauce(white sauce).
Tips
Do not cook the bhaji beyond melting the cheese, as the cream will release oil and the bhaji will lose its creamy texture.
