Ingredients

  • 3 piecesRockfish fillets (deboned)
  • 1/2 cupAll-purpose flour
  • 1-2 tbsCornstarch
  • 1/8 cupBread crumbs
  • 1 tspOld Bay seasoning
  • 1Egg
  • 1-2 tbsVegetable oil
  • 1 pinchSalt
  • 1 pinchPepper

Steps

35 minutes
  1. 1

    Mix flour, cornstarch, bread crumbs, Old Bay, salt, and pepper in a bowl.

    Beat eggs in a separate bowl.

  3. 3

    Dredge rockfish in the flour mixture, then dip in egg, then coat again in the flour mixture.

    Heat vegetable oil in a pan over medium heat.

    Fry fish on each side until golden brown and cooked through, about 3-4 minutes per side.

    Drain on paper towels and serve hot.

Tips

For extra crunch, you can use panko bread crumbs instead of regular bread crumbs.
