Cut pork belly into bite-sized pieces and season with salt and black pepper.

Heat oil in a pan, add pork belly, and sear until browned.

Add minced garlic and sauté until fragrant.

Stir in soy sauce, brown sugar, and ketchup. Mix well.

Tips
Sear the pork belly well at the start to lock in flavor and create a crispy texture. Let the sauce simmer gently so the sugar caramelizes without burning. Stir frequently once you add the sugar to prevent sticking. For extra depth, marinate the pork belly in soy sauce and garlic for 30 minutes before cooking. Add spring onions at the end to keep their color and crunch.
