  • 6 pieces 160gHorse mackerel (Ma-aji)
  • 1.5 gSalt
  • 25 gFlour
  • 30 gWater
  • 50gEgg
  • 40gPanko breadcrumbs
  • Moderate amountCooking oil

Steps

    Pat the surface of the fish dry with a paper towel.

    Gently rub the salt into the fish.

  3. 3

    Put the flour and water in a bowl.

  4. 4

    Mix them together with a whisk.

  5. 5

    Add the beaten egg to the bowl and mix well.

  6. 6

    Be sure to follow this mixing order to make a smooth batter.

  7. 7

    Spread the panko breadcrumbs evenly across a tray.

  8. 8

    Dip each fish into the batter, then place it onto the panko.

  9. 9

    Sprinkle breadcrumbs over the entire fish to cover it.

  10. 10

    Let the fish rest in the fridge for 20 minutes.

  11. 11

    Heat the oil to 170°C (340°F).

  12. 12

    Hold the fish gently by the edge.

  13. 13

    And slide it carefully into the hot oil.

  14. 14

    Fry until it turns a beautiful, uniform golden brown.

  15. 15

    Drain the excess oil on a wire rack or paper towels.

  16. 16

    Drizzle with your preferred sauce.
