Heat oil in a pan.

Splutter mustard seeds. Now add cumin seeds, curry leaves, red chilli, green chilli and ginger,garlic paste. Finally add tamarind without seeds.

After 1 minute add tomatoes and enough salt.

Now add grated coconut. Let it get cooked for 15-20 minutes. [for best result 30 minutes, stir in between]

Switch off the stove and let it cool.

Grind the mixture and make paste [Paste should be a little grainy].

[Optional] Garnation: Splutter mustard seeds, red chillies and curry leaves in oil and pour it to the paste.

Serve with Idli/Dosai
