Kerala Porotta (layered flat indian bread)

The one dish that the state of Kerala runs on. I finally made it and it was delicious! Never buying them from the streets again. This is Sanjeeda Rauf's recipe, she requested me to post it as she is having a busy week.

Mix all the ingredients and knead well. You should get a soft, shiny dough, not sticky. Keep aside in an oiled bowl for an hour.

Divide them into orange-sized balls.

Flatten the dough, and roll it out as thin as possible. Use a rolling pin for the first half, and then stretch it out on your right palm and throw it against the oiled counter. Like how fishermen throw their nets. :D

After rolling, (you can split into two to make smaller porottas) brush the top of the rolled dough with little more oil and fold it like sari fleets from one end to other.

Then make it to coil form by rounding from one end to other

Brush its top /bottom side with little more oil.

Again roll it to flat. No need to make it thin here.

Heat the pan and add oil and fry the porotta till done.

After taking from the pan, beat the hot parotta with both your hands (like how you clap)

Serve it with some classic kerala beef. It also goes well with a lot of other things, but nothing as important as the kerala beef. :D
