Flavored Snack Eggs

I make lots and keep them in the freezer. I eat them for breakfast or put them in my bento box for lunch. They also go really well with beer! Even if you don't have any other snacks, you will be satisfied with these. The key is in the boiling time!

Use eggs that are near their best-before date (they will peel nicely), return them to room temperature, boil them, stirring once or twice as you go. Let them sit in cold water for just less than 3 minutes after boiling. If you wonder if you've boiled them too much when you are peeling them, it means you got it right. They'll be tasty. If you leave them to soak in the flavoring overnight, they will become nice and creamy in the middle. Amazingly tasty! Recipe by Inyupon

Ingredients

  1. 5Egg
  2. 40 mlSoy sauce
  3. 2 tbspMirin
  4. 1 tbspTomato ketchup

Steps

  1. 1

    Soft boil the eggs and peel off the shells. The one shown in the photo was a fresh one, so the shell didn't come off very cleanly.

  2. 2

    Put the flavouring ingredients in a small saucepan and let the mixture simmer before putting the eggs in it to soak. Let them soak overnight in the mixture in the fridge, turning them over occasionally.

  3. 3

    They'll keep for 3-4 days in the fridge, but the yolk will be quite thick and at it's best around day 2.

  4. 4

    If you use a ziplock bag when soaking the eggs, you won't need so much of each flavoring ingredient. There will be enough for 4-5 eggs.
