Peach Turnover

I came across this recipe during my weekly search for recipes on the internet. These peach turnovers are great for morning tea, its not too sweet, so it will go great with a cuppa. I made these at home the other day and let me tell ya... K was smiling from ear to ear. It makes me feel good when I make his day ... :)

I came across this recipe during my weekly search for recipes on the internet. These peach turnovers are great for morning tea, its not too sweet, so it will go great with a cuppa. Lets begin with the yummy stuffing - peel, core and slice the peaches into approximately 1 inch pieces. In a small pan, mix the water, sugar, lemon juice and the peaches. Bring it to a boil and let the sugar get dissolved. Cook this for a few more minutes, but remember... don't let the peaches get mushy!

Once done, turn off the heat, and add the cardamom powder. Give it a quick stir and set aside to cool. Turn the oven to 200C. Take a sheet of the store bought pastry and cut into squares - I got 4 squares out of one sheet. Divide the peach filling into each of these squares and place them in the middle

Brush the edges of each square with the egg mixture. Fold each of the squares over to create triangles. Press the edges down and seal with your fingers or a fork. The fork makes the edges look pretty :)

Use a pastry brush and brush the egg mixture on top of the turnovers. Sprinkle the demura sugar on top. Bake until the turnovers get a nice golden color

Let it cool for 10mins and serve. Your Peach Turnovers can be served warm or cooled
