So I have a confession to make: I have been really suspicious of Microwave cooking, because I always felt the flavour or consistency might go wrong... But considering that I have a food blog, I can't let anything pass me by especially after seeing lots of MW recipes online! So today, I am presenting to you an easy, yummy, sweet recipe called Coconut Burfi. Those from India might have childhood coconut burfi memories, I definitely remember eating them - they are just so wonderful! I had a lazy afternoon and I decided to put my microwave to the test. The result was stunning. Might be a bit suggary for some, so you could reduce the sugar amount a bit

Ingredients

  • 1 cupCoconut Desiccated   -
  • 1 cupSugar -
  • 1/2 cupWater -
  • 2 tspsButter Clarified -
  • 1 tspCardamom powder -
  • 2 tspsRava -

Steps

    In a microwavable  bowl, mix the sugar and water and cook on high for 10mins. Make sure you stir in between so that the sugar syrup will be in a string consistency

  2. 2

    While this is happening, roast your rava

  3. 3

    After the 10 mins, add the dessicated coconut, cardamom powder, clarified butter and the roasted rava and cook for 10mins again on high, by stirring in between (I did it between 2.5-3mins)

  4. 4

    The coconut burfi mixture will start to thicken. Once done, pour it on a greased plate and let it cool

  5. 5

    Once cool, cut the burfi into any shape you like

  6. 6

    Serve!
