Italian Christmas Cookies

This is going to be the last cookie baked for this year! I have enjoyed this week as I spent every evening baking some delicious cookies that I am going to start packing to give away this weekend to our friends and neighbours :) Once again this cookie passed the taste test and that's always a good feeling after you spend over an hour standing in the kitchen trying to get it all right
I hope you and your family have a great Christmas ... Hope you get to bake some yummy cookies like I have this year and make sure you share it too like I always do and intend to do this year as well ... This season is all about sharing :)
This particular cookie recipe comes from  a magazine called Taste of Home Christmas Country Style, 2008

Ingredients

  • 5 cupsall purpose flour
  • 6eggs (yes you read that right!!!!!)
  • 2 cupssugar
  • 1 1/2 tspsbaking powder
  • 1 cupbutter softened
  • 2 tbspsalmond extract
  • 1 1/2 tspslemon juice
  • Glaze :
  • 3 3/4 cupsicing sugar
  • 1/2 cupmilk warm
  • 1 tspalmond extract
  • 1 tspvanilla extract
  • Sprinkles
  • 180 CPreheat the oven to
  • 5eggs Beat the until they are light and foamy ... took me about ish mins

Steps

    In another large bowl, mix the flour, sugar and baking powder, Mix well and set aside

  2. 2

    Back to the egg bowl, add the cup of butter and continue to beat and slowly add the flour mixture

  3. 3

    Make sure all the ingredients are well combined in this dough

  4. 4

    Make 1 inch balls out of the dough and place them (2 inches apart) on a baking sheet lined with baking paper. Bake for 12-15 mins... The cookies shouldn't be all brown on the top, but should be brown on the bottom

  5. 5

    While the cookies were baking, I quickly made the glaze. As soon as the cookies were done, I dunked them in the bowl of glaze and once well coated, I placed them on a rack to drain and immediately sprinkled some sprinkles

  6. 6

    I let it sit over night so it was nice and dry and then stored in an airtight container
