Quinoa & Coconut Soup

Back when I was pregnant with my daughter, my mum introduced me to Quinoa (pronounced keen-wah). She asked us to take her to the local supermarket, she wandered over to the organic aisle, and picked up a little packet of quinoa and asked me to make recipes out of it cause of the nutrient value of quinoa
If you are wondering how good quinoa is... Quinoa is a gluten free grain, its an ancient grain which contains more protein than any other grain. It has a good balance of all the essential amino acids, its rich in fibre, has a low GI and is good for keeping blood sugar levels stable
Talk about healthy!!!!! perfect for my vegan / gluten free lifestyle at the moment. Hope you enjoy this one!

Ingredients

  • 1/3 cupQuinoa : , uncooked , rinsed and drained
  • 1 tbspRed Curry Paste :
  • 1/2 inchGinger : piece grated
  • 1/2 cupCoconut milk :
  • 2/3 cupVegetable stock :
  • veggies carrots zucchini cauliflower beans peas Mixed : , , capiscum , , ,
  • Olive Oil
  • 2 tspsFish Sauce :

Steps

  1. 1

    Heat the olive oil in a pan and cook the red curry paste and the grated ginger together

  2. 2

    Give it a couple of minutes to get aromatic

  3. 3

    Next in goes the uncooked quinoa

  4. 4

    Give it a good mix with the curry paste

  5. 5

    Add the coconut milk and the vegetable stock and bring it to a boil

  6. 6

    Reduce the heat to low and add all your favourite veggies

  7. 7

    After 30mins, the quinoa and the veggies should be well cooked

  8. 8

    Add the 2 tsps of fish sauce and serve!
