Ingredients

  1. 2 cupuncooked rotini or rotelle pasta (6 ounces)
  2. 1/2 mediumcucumber
  3. 4 mediumgreen onions with tops
  4. 1 smallred bell pepper
  5. 1/4 cupolives, chopped
  6. Garlic Vinaigrette Dressing
  7. 2 clovegarlic
  8. 1/4 cuprice vinegar or white vinegar
  9. 2 tbspwater
  10. 2 tbspolive or vegetable oil
  11. 1/2 tspsalt
  12. 1/2 tspsesame or vegetable oil

    Prepare Garlic Vinaigrette Dressing:

    Peel and finely chop the garlic. Shake garlic and remaining ingredients in a tightly covered jar or container. Shake again before pouring over vegetables and pasta.

    Cook the pasta. 8 to 10 minutes for rotini, 9 to 11 minutes for rotelle, until tender.

  4. 4

    While pasta is cooking, chop the cucumber, and peel and chop the onions. Place the vegetables in large bowl.

  5. 5

    Cut the bell pepper lengthwise in half, and cut out seeds and membrane. Cut bell pepper into pieces, and add to bowl.

  6. 6

    Drain pasta and rinse thoroughly with cold water. Add pasta to vegetables in bowl. Add the olives.

  7. 7

    Pour the dressing over the pasta and vegetables, mix thoroughly.

  8. 8

    Cover and refrigerate 30 minutes, or until chilled.
