For the Filling : Boil the potatoes till they are soft enough to mash.

Drain, peel and mash them when they are still warm. Set aside.

In a frying pan, add the oil, garlic and onions, salt, chilli powder and turmeric sauté them till the onions turn golden brown.

Now, add the frozen peas and cook gently for a couple of minutes.

Add the mashed up potatoes and mix well. Check the seasoning and adjust accordingly.

Finally, add the coriander and curry leaves and switch off.

For the sandwich : In a skillet stove top, melt some butter over medium heat and place one slice of bread in the skillet. Add the potato stuffing and place another slice of bread on top and press down.

Cook for 1-2 minutes until one side becomes golden and crispy. Then, gently flip the sandwich and cook for another 1-2 minutes until golden brown.

Note : For extra taste, use salted butter or sprinkle some salt on your skillet before you grill your sandwich.
