Tomato coriander rice
Tomato coriander rice is a simple and tasty dish
Steps

Soak the basmati rice for 30 minutes in plenty of water.

Take a pan and add 2 tbsp of ghee.Fry the cut tomatoes and chopped coriander leaves for 10 minuets separately.. cool them and blend it into a coarse paste.

Add the remaining ghee in a heavy bottomed vessel,add ginger garlic paste and fry for 2 min and then add onions and fry till they turn golden brown.

Add the blended mixture and fry for 5 minutes.When oil starts coming out add the garam masala,chilly powder,green chillies and fry for 5 more minutes,

Drain the rice and add to the tomato mixture,Mix it up well and fry for 1 minute in high flame.Add 1.5 cup of water and salt to it.Keep this on high flame for 5-7 minutes and reduce the flame and cook with a lid covered for 15 mins.

Garnish it up with podhina leaves and crushed cashew nuts.
