Swiss rolls are very simple to make and this recipe is without butter. You may use any jams as you wish.

Preheat the oven to 180° And line the base of 15" baking pan with grease proof paper. Brush the base and sides of the pan with melted butter and dust with flor.

In a large bowl, whisk the eggs and sugar together until and light and fluffy and the add the water and vanilla extract.

Add the flour into the eggs mixture and just fold it with wooden spoon.

Transfer the whole mixture into the prepared pan and bake for about 12 to 15minutes.

Spread out a piece of grease proof paper on work sir face and sprinkle castor sugar evenly.

Inevrt the pan on to the sugered paper and carefully remove the tin and the paper from the bottom of the cake. Place a wet clothe over the cake to preventing the drying of it.

When the cake is cool enough, spread the jam evenly over the cake leaving approx 1" boarder.

With the longest side facing you, roll the cake tightly and wrap it with plastic wrap and set in the fridge for an hour.

Remove from the fridge and spread the whipped cream all over the cake evenly.

You may decorate the top with cherries, chocolate shavings, etc.

Cut into pieces of with sharp knife to serve.
