Cooking Instructions

Clean chicken, removing extra fast and rinse then pat dry

Make slices into the onion but not let it not break apart. Cut the scallions in to half

Sprinkle 1 tsp of salt into the cavity of the chicken and stuff it with the onion, garlic and scallion

Sprinkle the remaining season on the chicken along with the garlic. You can lift the skin at the breast and get some of the season and garlic under there.

Place chicken in a baking pan breast side down, cover and let it bake for 45 mins at 400f, then you uncover your chicken and gently flip it on its back, brush with olive oil and let roast for another 1hr 15 min at 375°F

To make gravy, you can pour a little warn water in the pan after removing the chicken, use a plastic spoon to get all those dripping into a sauce pan, add enough corn start to thicken and let simmer.
