Platanos Maduros(Fried Plantains) with Maple Ginger Avocado Dip

Plantains are a staple in Latina cuisine and in my heart.
Maduros, translating to ripe/mature in English, refers to Plantains that are extremely dark and ripe. Think like the kind of Bananas that silly Americans would ignorantly throw away presuming they've gone bad(BTW: THOSE ARE THE BEST BANANAS TO EAT!! IM GOING TO COME TO YOUR HOUSE AND SUMMON THE BANANA GODS TO ELICIT THEIR BANANA WRATH ALL OVER YOUR LINENS AND CHINA COLLECTION! SAME WITH PAPAYA SEEDS, EAT THOSE!). Just kidding, I know your China collection is priceless, I'd never do that. Just eat your dang ripe bananas.
These Maduros Platanos are:
~Caramel-ly sweet
~Soft and succulent
~Little pillows for all of your tongue's dreams
While Tostones, which are twice fried from Plantains that are green and unripe, are crisp, crunchy, and more on the savory side of the party.
The Maple-Ginger Avocado dip is the perfect flavor balancing compliment and super simple! The hint of Ginger really brings out the sweet maple essence all while being caressed by the classic creaminess of Avocado that we all know and love so dearly.

Steps

Peel plantains and chop into 1/4"-1/2" slices diagonally, to create longer pieces.

Scoop avocado flesh into blender/food processor, with peeled ginger, maple syrup, and salt & pepper. Blend until smooth, stopping once or twice to scrape down sides.

Heat half of the oil over medium-high heat in a skillet or pan. Once heated, add plantains being sure not to overcrowd. You may have to fry in batches depending on the size of your pan. Use the rest of the oil as needed.

Transfer plantains to a paper towel to drain off excess oil.

Serve with dip and enjoy!
