Qubani ka meetha is an authentic Hyderabadi dessert. Qubani means apricot in Urdu. Qubani ka meetha has a special place in wedding menus and festivals in Hyderabad. Its an easy to make hassle-free dish. Dried apricots are a rich source of vitamin A and iron too.
Apricots are soaked overnight,in sufficient water to cover the whole apricot. Next day in the morning,they are cut and split in half.
The seed(kernel) is removed. This kernel has a small almond-like nut inside,it is used to garnish the dish.
The beauty of this dessert is that uses up everything,the water in which apricots are soaked,apricots and the little nut inside the kernel too!

Ingredients

  • 250 gmapricots dried
  • 100 gmsugar
  • 2 tspsfresh cream

Steps

    Soak the apricots in water,cover and keep them overnight.

  2. 2

    Next day in the morning,drain out the water and keep it aside.

  3. 3

    Split the apricot in half,then remove its seed(kernel). Cut the apricot in smaller pieces.

  4. 4

    With a nutcracker,cut open the kernel and remove the nut out of it.

  5. 5

    In a non-stick pan,add water and let it boil.

  6. 6

    Add sugar and stir till it dissolves.

  7. 7

    Now add apricots,cover the pan and let it cook for 10 minutes.

  8. 8

    Switch off the flame,grind to a coarse paste after it cools down.

  9. 9

    Garnish with fresh cream and nuts and its ready to be devoured!

Hi! A die-hard foodie,an avid traveler and a dentist-that's me! While traveling this diverse and heritage-rich country of mine,I was lucky to relish the regional cuisines,made with local produce. I have been to see the snow-capped mountains of Himalayas, the serene ocean at land's end Kanyakumari, the devout Jain temples of Gujrat,the intricate carvings at Badami-Hampi,sea-shores of Karde-Harne, the dreamy backwaters of Kerala.......this is an endless list! I relished the food everywhere I went and came back with loads of memories....I experimented in my own kitchen,trying to recreate these flavors. Few recipes need to be made in their traditional way,few could be modified to adapt to our busy urban lifestyle.Cook Bake and Grill is an attempt to present this culinary journey of mine to you.... As I continue to travel and recreate diverse flavors in my kitchen,I will keep u all updated! Welcome aboard!
