Beet Vinaigrette drizzled over a Pineapple, Watermelon and Cucumber Salad

Beet vinaigrette, my very own invention, tastes exactly like Balsamic Vinegar! I stumbled across this find while whipping up a new concoction of beet juice, lemon juice, coconut oil, salt and parsley. A very simple recipe, with very bold flavours that make your taste buds do a happy dance, especially when paired with sweet fruits. The combination of sweet and tart is outstanding!
While Balsamic Vinegar is traditionally a reduction of grapes originating in Italy and demands a pretty penny, this much healthier and freshly made version is not only lighter on the pocket, but fancies the palette as well.
The fresh pineapples, watermelon and cucumber took on a new and delightful taste after being drenched in this beet vinaigrette. Although I am sure it will add lots of brightness not only in colour but in taste also to your regular salads of lettuce, kale, tomatoes and the like. Surely one to try!

  • 1lemon juiced
  • 4 tbspscoconut oil
  • 1/2 tspsalt
  • 1 tbspparsley chopped
