A healthy side dish that goes great on rice. The sourness of the ketchup cuts through the umami of the tomatoes nicely.
Steps

In a pot, heat vegetable oil and stir fry the garlic and white part of spring onion until fragrant.

Add the chopped tomatoes and stir fry for another 5 minutes.

In the meantime, whisk the egg mixture ingredients in a bowl and set aside.

Add water/stock, ketchup and sugar to the tomatoes and bring to a boil.

Reduce to a simmer and gradually pour the cornstarch mixture until you reach the desired consistency.

Turn off the heat and use a fork or chopsticks to gently pour the egg mixture around the pot, letting it set without mixing.

Garnish with the green part of spring onion and optionally some extra sesame oil. Serve with rice. Enjoy!
