Prepare the corn:
Boil the sweet corn kernels and allow them to cool to room temperature. Coarsely grind them in an electric chopper or blender. - 2

Heat a pan and add butter. Once melted, add green chillies and sauté for a few seconds. Add the coarsely ground corn and sauté for 2 minutes. - 4

Add vegetables:
Add chopped shallots, grated carrot, green bell pepper and red bell pepper. Sauté for another 2 minutes. - 6
Season:
Add white pepper powder and salt. Mix well and sauté briefly. - 7
Cool the mixture:
Transfer the mixture to a mixing bowl and allow it to cool completely. - 8
Make the dough:
Add grated paneer, breadcrumbs and chopped coriander. Mix well to form a soft, bindable dough. - 9

Shape the bites:
Grease your hands lightly with oil and shape the mixture into 22 bite-sized portions. - 12
Prepare the slurry:
Mix cornflour, chilli flakes, mixed seasoning and water to make a smooth, lump-free slurry. - 13
Coat:
Dip each bite into the cornflour slurry and coat evenly with breadcrumbs. - 14
Cook in an appe pan:
Heat an appe pan and add a few drops of olive oil into each cavity. Place the coated bites and cook, turning gently, until golden and crisp on all sides. - 15

Alternative shapes & cooking methods:
You can also shape the mixture into cutlets/tikkis and shallow-fry them using oil or ghee, or cook them in an air fryer until golden and crisp. - 17

Refrigerate the uncooked shaped bites for 2–3 days. When required, shallow-fry, air-fry or deep-fry until golden and crisp. - 20
