COOK THE PASTA: Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, according to package instructions. Reserve 1 cup of pasta water, then drain and set aside.

COOK THE STEAK: Heat olive oil in a large skillet over medium-high heat. Season steak cubes with salt, black pepper, garlic powder, and paprika. Sear steak in a single layer for 2–3 minutes per side, until browned and cooked to your preference. Remove steak from skillet and let rest for a few minutes.

MAKE THE CHEESE SAUCE: In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk and heavy cream until smooth. Add mustard, garlic powder, onion powder, salt, and black pepper. Bring to a gentle simmer and cook until thickened, about 2–3 minutes.

ADD THE CHEESE: Reduce heat to low. Stir in cheddar, mozzarella, and Parmesan cheese. Mix until cheese is fully melted and sauce is smooth and creamy.

COMBINE: Add the cooked macaroni and steak to the cheese sauce. Stir to coat everything evenly. If needed, add reserved pasta water a little at a time to reach your desired creaminess.
